Wolfgang Mätzler, chef since 1988, awarded to the hood chef and still no less convinced in his vocation and profession, has realized his long-awaited and matured need – “to bring stories into the glass”. He was inspired by the countless preserving jars of his grandmother, which found their place like treasures on the basement shelves, the summer and the associated smells, flavors, stories and anecdotes firmly locked inside, waiting to be opened again on cooler days …. and the preserved was able to revive with all its power the memories. For Wolfgang it was clear that he would continue to pursue the experience of preserving and what it produces, to hone and refine the technique and to bring joy to many people with it!
